have you seen @mezemike viral hack for making döner kebab or gyro in your oven at home?! it’s paper thin and SOOO easy to make. my favorite dish at turkish restaurants is the iskander kebab but i could never recreate it….until now. i’m genuinely blown away!
2lb ground beef or lamb
2 medium yellow onions
1/2 cup yogurt
2 tsp kosher salt
2 tsp paprika
1 tsp aleppo pepper
1 tsp oregano
1/2 tsp cumin
1 tsp black pepper
1/2 tsp cinnamon
* preheat the oven to 500F.
* use a food processor to combine all ingredients evenly.
* add the onion, yogurt and spices to a food processor and create a paste. add in the ground meat and pulse until combined.
* place a ball of the meat mixture between two pieces of parchment paper.
* use a rolling pin to evenly spread out the meat mixture—it should be very thin and uniform.
* remove the top layer of parchment paper (you can reuse this piece!) and fold the parchment over the meat repeatedly until you’re left with a small rectangular parcel.
* (try to make sure the parchment paper is cut to the width of your baking sheet)
* if using right away, layer parcels on the baking sheet and bake for 12-15 minutes. (if parchment paper is charring, flip it)
* remove from oven and unroll each parcel. (if there’s excessive liquid being released, you can drain it but i like keeping some!)
* cut into smaller strips and brown in the oven for a few more minutes.
* it’s then ready to serve. use for sandwiches, iskander kebab, gyros, döner
