Egyptian Goulash Bel Gebna

egyptian goulash (phyllo cheese pie) 🇪🇬 

egyptian goulash is a baked phyllo pastry that’s filled with ground meat, cheese or vegetables and coated in a milk-egg wash, which gives it a soft texture while maintaining the crispy layers. goulash is a common dish on ramadan iftar spreads—i shared my ground beef goulash recipe last year and it went viral (for obvious reasons) but this cheese one is even better! it’s soft and slightly briney and is great to make in advance. i made it in my @lodgecastiron and love the incredible crust it gave it! 

16 oz mozzarella, shredded 
8 oz feta cheese (desalinated)
1 tbsp black seed 
@vitalfarms eggs, beaten 
#4 sheets of phyllo pastry
1 stick salted butter
1/4 cup olive oil
@vitalfarms egg, beaten 
1 cup milk
sprinkle of cracked black pepper 
2 tbsp black seed and sesame seeds

🍴place feta cheese in a bowl of water for about an hour to reduce saltiness. remove and drain before adding to the bowl. 
🍴 combine shredded cheeses with beaten eggs to bind together. add in black seed and set aside. 
🍴in a pot, melt butter and add in olive oil. remove from heat and use to grease each layer of pastry. 
🍴grease a baking pan with butter and olive oil. layer half the phyllo dough, brushing every other sheet with the melted butter. 
🍴place cheese mixture and spread evenly.
top with remaining phyllo sheets, brushing every other sheet with butter.
🍴cut goulash into squares. if making immediately continue to next step, otherwise freeze until ready to use. 
🍴 whisk egg, milk and cracked pepper together and pour on top of the pastry. be sure to coat the entire pastry.
🍴top with black seed and sesame seed mixture. 
🍴bake at 375F for 40-50 minutes, until the top layer is golden. 
🍴remove from the oven and cut the pie across perforated slices.
