Syrian harak osbao

here are so many amazing middle eastern and north african vegetarian entrees that you should be making rn, let’s start iff with my favorite—harak osbao! it’s a syrian classic dish that is so good it translates to “he burnt his fingers” and trust me, you will too 😋

* 5 medium yellow onions
* 1/2 cup olive oil 
* 2 cups brown lentils
* 8 cups of water
* 1/2 tsp ground cumin
* 1/2 tsp ground coriander
* 1/2 tsp kosher salt
* 1/4 tsp black pepper
* 1/4 cup pomegranate molasses
* 1/4 cup lemon juice
* 1/4 cup tamarind paste 
* 2 cups fettuccine or linguine broken into small pieces 
* 2 cups chopped cilantro 
* 10 cloves of garlic, chopped finely 

1. in a wide pan, saute julienned onions in olive oil until golden. remove caramelized onions. from heat immediately.
2. in the same pan, fry pita chips until golden. reserve this olive oil for later use.
3. in a large pot, add rinsed lentils to water and bring to a boil. reduce the temperature and simmer lentils for 45 minutes until tender. 
4. add in spices, pomegranate molasses, lemon juice and tamarind paste. 
5. add in broken up pasta and mix well continue to cook for about ten minutes.
6. in the reserved olive oil, fry cilantro and garlic. add it into the stew and mix well.
7. simmer the stew to desired thickness—ideally a thick soup texture. 
8. add to a bowl or platter and top with pomegranates, cilantro, fried pita chips and caramelized onions. drizzle with pomegranate molasses for vibes!
